Looking for the perfect appetizer for this summer? Look no further! This salad, traditionally prepared in Mallorca, is perfect for entertaining guests or having a healthy snack…and you will remember your vacation to Spain in every bite!
This recipe calls for all natural ingredients including:
1kg ripe tomatoes cut into fourths
1 large onion, chopped
2 long green peppers, chopped, cored and without the seeds
100 ml extra virgin olive oil
1 lemon, juiced
Sea salt
Freshly ground black pepper
A pinch of cumin spice
First, toss all salad ingredients in a bowl and mix well. The peppers are best cut in small strips. Then in a separate bowl of serving cup, mix the oil and lemon juice until thoroughly mixed together. Then, toss the salad with the dressing so that the salad is well covered with the dressing. Then, add the spices (salt, pepper and cumin) to your liking. This recipe stores very well and you do not have to worry about the vegetables wilting as the lemon juices keeps them fresh. This salad tastes best chilled before eating.
