26 Jun Empedrat – Beans and Cod Salad
Looking for an amazing summer salad that’s delicious but also very healthy and high in protein? Take home this perfect recipe known as Empedrat or the traditional Catalan salad with beans and cod fish or Bacalao in Spanish.
This salad is perfect for the summer heat as it is served cold. It has a mixture of vegetables and only needs a hint of salt, pepper and olive oil as the dressing!
The ingredients consist of:
- Approximately 2 cups of dry white beans (or 6 cups of cooked white beans if purchased in a can)
- 500 grams of salted or fresh cod depending on your preference
- 4 tomatoes
- 1,5 cups of black olives, chopped
- 2 hard boiled eggs, sliced (optional)
- 3 onions
- 1 handful of cut parsley
For the dressing:
- Olive oil
- Salt and pepper
The preparation for this dish is very simple and takes less than 30 minutes! First, chop the tomatoes and onions. Then mix in a bowl with the cooked beans, adding the olive oil, salt and pepper as you please. Once thoroughly mixed, place in a dish or pan making sure that the mixture is well pressed together. Then, place the sliced olives and hardboiled eggs on top and sprinkle the parsley as a garnish. Then, slice the fresh cod and place on top of the salad as the finishing touch! After having tasted the dish, add olive oil, salt and pepper as needed. Store the dish in the refrigerator for an hour so that the salad is served chilled.
