Its name comes from a Catalan verb, \u201cescalivar\u201d, meaning \u201c<strong>To roast in the embers<\/strong>\u201d. But don\u2019t worry, if you don\u2019t have embers in your place, an oven will work too&#8230; (Sorry&#8230; We were trying to make a joke in here&#8230; ;))\n\nIt\u2019s a<strong> simple, healthy and tasteful Mediterranean dish<\/strong>, with rural origins, <strong>made from roasted tomatoes, eggplants, peppers and onions.<\/strong> It is typically served <strong>warm or cold<\/strong> with crusty bread, or to accompany meat or fish in warmer months, it is suitable to eat all year-round. Some people say that \u00a0it is better to prepare and eat the Escalivada on the same day; some others think that it will be better if you put it in the fridge and eat it the day after. <strong>Both ways, it is a delight.<\/strong>\n\nThe best of it: Even if cooking time takes 1 and half hours,<strong> preparation time is only 10 minutes<\/strong>! 5 minutes at the begining and 5 minutes at the end.\n\nSo you can finish whatever you need to do while you wait for it to be cooked. \ud83d\ude42\n\n<b>Ingredients:<\/b>\n<ul>\n \t<li>\u00b7 \u00a04 tomatoes<\/li>\n \t<li>\u00b7 \u00a02 medium eggplants<\/li>\n \t<li>\u00b7 \u00a02 red bell peppers<\/li>\n \t<li>\u00b7 \u00a02 medium onions<\/li>\n \t<li>\u00b7 \u00a01 bulb of garlic<\/li>\n \t<li>\u00b7 \u00a0Extra virgin olive oil<\/li>\n \t<li>\u00b7 1 to 2 little cans of anchovy fillets.<\/li>\n \t<li>\u00b7 \u00a0Salt and pepper<\/li>\n<\/ul>\n<b>Preparation:<\/b>\n\n<strong>1.<\/strong> <strong>Heat your oven<\/strong> to 180\u00baC<b> <\/b>or 355 \u00baF.\n<strong>2.<\/strong> <strong>Rinse all the vegetables<\/strong> and <strong>rub with the olive oil the skin<\/strong> of the tomatoes, the red bell peppers and the eggplants until they are totally shinny by the oil.\n<strong>3.<\/strong> Once done, peel the onions and\u00a0<strong>cut the eggplants and the onions in half<\/strong>. Make <strong>small cuts on the skin of the eggplans<\/strong> so it doesn\u2019t explode while they are being cooked. (By the way, we mean a little \u201cpop\u201d by \u201cexplosion\u201d).\n<strong>4.\u00a0Place\u00a0all the ingredients, except the tomatoes, in the roasting pan<\/strong> and <strong>pour some oil<\/strong> over all them and s<strong>prinkle it with salt and pepper<\/strong>. <strong>Add the garlic bulb<\/strong> to the roasting pan without peeling it.\n<strong>5.<\/strong> <strong>Place the pan in the heated oven<\/strong>, in a medium rack. <strong>Roast it for about 1 hour<\/strong>, flipping upside-down the vegetables after the first half hour.\n\n<strong>6.<\/strong> After it\u2019s cooked for one hour, just <strong>place the tomatoes to the pan and continue roasting<\/strong> until they are totally cooked. (approximately 20 or 30 more minutes).\n<strong>7.<\/strong> <strong>Once it\u2019s finished<\/strong>, you will realize that the <strong>bell peppers\u2019 and eggplants\u2019 skins are burnt<\/strong>.<strong> Let<\/strong> them <strong>cool<\/strong> for around 20 minutes <strong>and then peel off and discard the skins<\/strong> of the bell peppers and the eggplants.\n<strong>8.<\/strong> <strong>Cut the<\/strong> roasted <strong>vegetables into strips<\/strong> and place them on a dish, pour again some salt, pepper and olive oil and finally <strong>stir well<\/strong>.\n<strong>9.<\/strong> <strong>Recollect the juice of the oil remaining in the roasting pan<\/strong> and pour a little bit of it to the dish where you prepared the cooked vegetables. Maintain the rest in a bowl.\n<strong>10.<\/strong> <strong>Serve the vegetables all together in the same tray along with some anchovy fillets<\/strong>.
